Hot & Cheesy Chicken Casserole


Ingredients:
3 cups cubed, cooked chicken
14 oz. frozen broccoli
2 cups cooked rice
1 1/2 cup frozen mixed veggies (peas/carrots/corn etc.)
1 can Cream of Chicken soup
1 can Fiesta Nacho Cheese soup
1 can Rotel
1/2 cup milk
1/2 teaspoon crushed red pepper
1 cup shredded cheese (any variety)
1 cup crushed Ritz crackers

Preheat oven to 350 degrees.

Place chicken in the bottom of a 9x13 baking dish.

In large bowl, combine frozen broccoli, cooked rice & frozen mixed veggies. Spread over chicken. In large bowl, combine soups, Rotel, milk & crushed red pepper. Stir in half of the shredded cheese. Pour over veggies in dish. Sprinkle crushed Ritz over top & then top with remaining cheese.

Bake uncovered 35-40 minutes.
