Ingredients:
1 cup flour
2 t. salt
1/4 t. pepper
2 t. paprika
1 3-4 lb. chicken, cut up into 8 pieces
8 T. butter or margerine, melted
Honey-Butter Sauce:
4 T. butter
1/4 c. honey
1/4 c. lemon juice
Preheat oven to 400 degrees. Combine flour, salt, pepper, and paprika in a shallow bowl. Dredge chicken pieces in flour mixture. Pour the melted butter into a 9"x13" baking pan. Add pieces of floured chicken in a single layer, turning chicken to coat with butter. Bake skin-side down for 30 minutes. While chicken is cooking, make sauce by melting the butter in a small pan and beating in the honey and lemon juice. Turn chicken pieces, pour Honey Butter Sauce over, and bake for an additional 30 minutes or until tender. Spoon pan juices over chicken and serve.

Curry Pork Tenderloin
Ingredients:
1 cup flour
1 t. red pepper flakes
1 (2lb.) pork tenderloin, cut into 1 1/2 inch strips
2 T. cooking oil
1/2 cup Marsala wine
1 (14 oz.) can coconut milk
1/2 cup crunchy peanut butter
2 cubes beef bouillon
3 t. curry powder, or more or less to taste
3 cloves garlic, pressed
1 onion, diced
1 pound fresh mushrooms, sliced
Preheat oven to 350 degrees. Oil a large casserole dish. Combine flour and red pepper flakes in a large resealable plastic bag; add pok, seal, and shake to coat.
Heat oil in a large skillet or wok over medium-high heat. Brown tenderloin in hot oil, stirring frequently. Drain meat on paper towels, then arrange in the bottom of casserole dish.
In the same pan the pork was cooked in, mix together wine, coconut milk and peanut butter over low heat. Crumble bouillon cubes into the mixture and season with curry powder. Heat until warm, and then stir in the garlic, onion and mushrooms. Pour over meat in the casserole dish. Bake in preheated oven for 45 minutes.

2 (8oz.) packages dirty rice
5 cups water
2 pounds whole cooked crawfish, peeled
3/4 medium shrimp-peeled and deveined
1/2 lb. andouille sausage, sliced into rounds
2 cups sliced mushrooms
1 large green bell pepper, chopped
1 large sweet onion, chopped
3 cloves garlic, minced
Heat oil in a heavy Dutch oven over medium heat. Sear chicken on all sides until browned. Stir in dirty rice mix and water. Stir in crawfish, shrimp, andouille sausage, mushrooms, bell pepper, onion and garlic. Bring mixture to a boil, and stir. Reduce heat, cover and simmer until rice is tender, and moisture is absorbed, 25-30 minutes.
Depending on the season and my budget, I will sometimes use the frozen crawfish tail meat instead. If I use fresh I usually leave a couple of them whole in it just because.

Marsala Pork Chops in Crock Pot

1 tablespoon rosemary (fresh, minced if possible)
1 teaspoon dry mustard powder
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
6 porkchops
2 tablespoons vegetable oil
1 onion, sliced
1 (4oz) package sliced mushrooms
1 clove garlic, minced
1 (10.75 oz) can cream of mushroom soup
1/2 cup Marsala wine
Stir together the flour, rosemary, mustard, salt, garlic powder, & pepper in a bowl. Dredge pork chops in mixture, shaking off excess. In large skillet, heat oil over medium-high heat. Add pork chops & cook until golden brown on both sides, about 4 minutes per side.
Place onion, mushrooms & minced garlic in crock pot. Add browned pork chops, then pour in the cream of mushroom soup and the Marsala wine. Cover. Cook on low until pork chops are tender, 6-8 hours.
Can serve over egg noodles or mashed potatoes. I used mashed potatoes. Have the say that the guys LOVED this one.

Braised Pork Chops with Sweet Potatoes and Apples ( in Crock Pot)
Ingredients:
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
4 bone-in, center cut pork chops (6-8 oz each)
2 Tablespoons olive oil
1 large onion, sliced
1 cup chicken broth
2 large sweet potatoes, about 8 oz each, peeled & cut into wedges
1 Golden Delicious Apple, peeled & cut into wedges
1 Granny Smith Apple, peeled & cut into wedges
Combine flour, salt and pepper in a large bowl. Dredge pork chops in seasoned flour, shaking off excess.
Warm oil in large skillet over medium-high heat. Add chops an cook unitl lightly browned, about 2 minutes per side. Transfer to slow cooker. Add onion to skillet an cook, stirring often, until softened, about 3 minutes. Pour in broth, increase heat to high and bring to a boil, stirring to pick up any browned bits on bottom. Pour over pork chops in slow cooker.
Scatter sweet potatoes and apples around chops. Cover & cook on low for about 3 hours or until pork chops are tender.
Chocolate Banana Cookie Bars
Ingredients:
1/2 cup butter
1 cup sugar
1 egg
1 teaspoon vanilla
1 1/2 cup mashed bananas
1 1/2 cup flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup cocoa
1 cup chocolate chips
Cream butter and sugar together, add egg, vanilla and mashed bananas, beating thoroughly.
In a separate bowl, mix flour, baking powder, baking soda and salt. Add to creamed mixture.
Divide the mixture in half. Add cocoa to one half. Spread the mixture with cocoa into a greased 9 x 13 pan. Spoon remaining mixture on top. Sprinkle chocolate chips on top.
Bake for 30 minutes at 350 degrees.

Buffalo Chicken Chili
Ingredients:
2 1/2 lb boneless chicken, cut into 1-inch pieces
1 cup chopped onion
1 cup sliced celery stalks
1 cup chopped carrots
1 can diced tomatoes, undrained
1 can black beans, drained & rinsed
1 cup chicken broth
2 teaspoons chili powder
1/2 teaspoon salt
1/4 cup buffalo wing sauce
crumbled blue cheese, optional
In CrockPot mix everything EXCEPT wing sauce & blue cheese. Cover, cook on low 8-10 hours. Stir in buffalo wing sauce. Serve with crumble blue cheese if desired.
I used diced tomatoes with green chilis because that is what I usually buy. I also used more than 1/4 cup of the wing sauce. I actually made 2 crock pots full, one a 6qt & one a 7qt, so I doubled it + some. Between the 2 I used 5 lbs chicken, 1 onion, 4 stalks celery, 5 carrots, 3 cans tomatoes, 3 cans beans, 3 cans broth, 4 teaspoons chili powder & 2 bottles of wing sauce. And I totally skipped on the blue cheese.
It is a little hot, but it was YUMMY!!!
